Tarragon Chicken Salad

  • 2 cups chopped, cooked chicken meat
  • 1/4 cup dried cranberries, finely chopped
  • 1 teaspoon lemon juice
  • 1/4 cup mayonnaise
  • 1-2 Tbsp fresh chopped tarragon
  • Salt and pepper to taste

Mix all of the ingredients together. Adjust seasoning.  Serve over mixed greens or on a sandwich
