Chard is the same species as beets, just a variety that has been selected for its leaves instead of root.  It is also closely related to spinach, and works well as a substitute for any recipe for which you might usually use spinach (I love to use it in spanakopita, lasagna, spinach pie…).  Here are some more of our favorite recipes that use chard:
