The adventure of eating escarole for the first time is learning to love its bitterness. Escarole is used in italian cooking and there are ways to cook and reduce the bitter taste. But more importantly, bitter greens are so good for you! They help aid digestion and curb sugar cravings, among other things.

    I made a soup with great northern beans, corn, vegetable stock, salt, pepper, garlic powder, and an entire head of escarole (finely chopped) in the crock pot and it was WONDERFUL.
